Maple-Bacon-Fig Jam

Ingredients

maple syrup

honey

balsamic vinegar

vanilla extract

tsp
lemon zest

tsp
lemon juice
1/4 lemon wedge
dash of sea salt
splash of orange juice
1-2 TBSP

of thick bacon
Instructions
In a sauce pan or dutch oven, throw in all of the ingredients and set aside (no heat yet).
While the fruit is marinating, cook the bacon.
Set the bacon aside to cool.
Over medium high heat, bring the fig-maple syrup mixture to a boil.
Chop the bacon into small pieces and add them to the mixture.
Lower the heat and simmer for 30-45 minutes or until the sauce becomes thick aka jam-y.
Let it cool and transfer the jam into mason jars.
Refrigerate once it is cooled.
Notes
Omit the honey for a slightly less sweet jam. Serve on top of whatever you come up with! Gluten free bread, plantains, pork chops, etc!
