Cut the sweet potato into fries. Every sweet potato is a beautiful shape and will give you different size fries. Try to make them uniform.
Toss fries in a large bowl with cooking fat of choice and salt & pepper.
Line a cookie sheet with parchment paper and spread fries out. Try not to crowd.
Bake for 10 minutes on parchment paper.
Slip parchment paper away and bake for an additional 10 minutes until crispy on the ends.
Notes
You can make as many sweet potatoes as you want, but don't crowd them or they will get too soft instead of crispy. I don't peel my sweet potatoes, but you can!
