Gluten Free Sausage Gravy with “Biscuits” (Sweet Potato)

Ingredients

  • 1 lb. Pork Sausage
  • 1 TBSP Ghee or Grass-fed Butter dairy
  • 1 tsp Poultry Seasoning
  • 1 tsp Garlic Powder
  • 1/4 Cup Gluten-Free All-Purpose Flour I used Bob's Red Mill 1 to 1
  • 3 Cups Coconut Milk It will not taste coconut-y
  • 1 tsp Sea Salt more if needed
  • Pepper
  • Chives for garnish

Instructions

  • Heat a cast iron skillet or saucepan on medium-high.
  • Add the pork sausage and cook until brown.
  • Mix in all of the spices.
  • Through in the ghee or butter.
  • Add the flour and mix well.
  • Once the flour has dissolved, add the coconut milk.
  • Let it simmer on medium low until the gravy becomes thick, about 4 minutes.
  • Add salt and pepper to taste.
  • Pour gravy over pre-cooked sweet potato and garnish with chives.

Notes

I used plain pork sausage and added my own spices but feel free to use already seasoned sausage or even a different ground meat. I cooked my sweet potatoes for 20 minutes in my instant pot or you can bake them at 400 degrees for 45 minutes depending on the size.
