- 1 13.5 fl oz Coconut Cream 1 Can, I used the Trader Joe's brand.
- 1/4 cup Pure Maple Syrup
- 2 Tbsp Dairy-free French Vanilla Creamer I used NutPods but if you can't find it, omit and add 1 tsp vanilla extract.
- 2.5 cups Green Grapes (1 lb.) Cut in half.
- 2.5 cups Pineapple (1 Medium Fruit) Chopped into small pieces.
- 2.5 cups Strawberries (1lb.) Sliced.
- 2 Bananas Chopped into half inch pieces.
- 1 Apple Peeled, cored and chopped into small pieces.
- 1 cup Unsweetened Shredded Coconut
In a large bowl, mix together coconut cream, maple syrup, and french vanilla Nutpods. Set aside.
Rinse and chop all of your fruit (peel pineapple, bananas, and apple before chopping).
Add chopped fruit to the cream mixture. It should be about 10 cups of fruit in total. Carefully mix.
To the salad, add 1 cup of unsweetened shredded coconut. Carefully continue to mix.
Cover and refrigerate for at least 2 hours, preferably overnight.
