Preheat oven to 425 degrees F.
Peel and rinse 1lb. of carrots, about 6 large carrots.
Cut the carrots into "fries" or any other shape.
Place the carrots on a large cookie sheet. If it is not non-stick, add parchment paper.
In a small bowl, melt ghee or butter. To the bowl add olive oil, maple syrup, and minced garlic. Mix well.
Drizzle the mixture over the carrots coating evenly. Add salt and pepper.
Roast carrots in a 425 preheated oven for 25 minutes, tossing half way.
Optional, add chopped mint to serve.
