In a mixing bowl, combine all the ingredients except for the shredded coconut.
Spread the mixture on a baking/cookie sheet. For a crumby granola, spread mixture out well. For a chunkier clustered granola, keep mixture in a thicker layer.
Bake for 30 minutes mixing every 10 minutes. Add the coconut immediately after you take it out of the oven.
Let it cool for at least 10 minutes.
Store in a mason jar or glass container for a few weeks! Enjoy!
