Homemade Paleo Granola

Granola is one of my favorite snacks but most store bought brands are filled with refined sugars. This is such a fun recipe and can be done with so many different nuts and traditional granola ingredients. I love granola over some chia pudding or by the handful!

Homemade Paleo Granola

Ingredients

  • 1 cup of unsweetened coconut flakes
  • 1/2 cup of sliced almonds
  • 1/2 cup chopped pecans
  • 1/2 cup chopped walnuts
  • 1/4 cup sunflower seeds
  • 2 tablespoons coconut flour
  • 1 teaspoon cinnamon optional
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/4 cup melted coconut oil
  • 1/4 cup honey/maple syrup

Instructions

  • Pre-heat oven to 350 degrees.
  • In a mixing bowl, combine all the ingredients except for the shredded coconut.
  • Spread the mixture on a baking/cookie sheet. For a crumby granola, spread mixture out well. For a chunkier clustered granola, keep mixture in a thicker layer.
  • Bake for 30 minutes mixing every 10 minutes. Add the coconut immediately after you take it out of the oven.
  • Let it cool for at least 10 minutes.
  • Store in a mason jar or glass container for a few weeks! Enjoy!

Notes

Add flavors 1/2 cup of pumpkin purée and 1 teaspoon of pumpkin pie spice for a fun twist!
