Churro Oatmeal Bake

An easy bake that can be used as a quick breakfast bite or made into a dessert by adding some vanilla ice-cream. Kid approved!

Ingredients

  • 1 1/2 cup Almond Milk or Milk of Choice
  • 2 Eggs
  • 1/4 cup Melted Ghee, Butter or Coconut Oil If you are not intolerant to dairy, I suggest using a good grass-fed butter (I love Kerrygold).
  • 1/2 cup Coconut Sugar or Maple Syrup
  • 1 TBSP Cinnamon
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 cups Rolled or Quick Oats

For Topper

  • 1 tsp Cinnamon
  • 2 TBSP Coconut Sugar or Pure Cane Sugar

Instructions

  • Pre-heat oven to 350.
  • In a large bowl, mix milk, eggs, and melted ghee.
  • To the bowl, add sugar, baking powder, cinnamon and salt. Mix well.
  • Add the oats to the bowl until evenly mixed.
  • Grease an 8x8 baking dish.
  • Add mixture to baking dish and bake at 350 for 30 minutes.
  • In a small bowl, mix together sugar and cinnamon.
  • Once the bake is done, sprinkle cinnamon sugar mixture over the top.
  • Let it cool for 10 minutes before cutting.

Notes

Add a scoop of vanilla ice-cream to make this into a dessert! Sprinkle some more cinnamon-sugar on top.
