Churro Oatmeal Bake

The idea to make an oatmeal bake came from memories of my favorite Pullman, WA coffee shop, ROOST. Aside from the great friends I made while living there, I truly miss Roost. They had a delicious oatmeal bake. It was warm and served with heavy cream. I wanted to add my own spin on it and decided what better than some “churro” flavors.

If you have ever had a churro, like a real churro, you know they are one of the greatest desserts. While churros have origins in European countries, they are very popular in Mexico. Nothing like a street vendor selling some fresh churros sprinkled with cinnamon-y, sugar-y goodness.

This recipe is great if you have busy mornings and need a quick bite to eat with your morning coffee. It also serves as a great dessert. My sister Amparo gave me the great idea to add some vanilla ice cream on top and of course, sprinkle on some more cinnamon-sugar. Yes, this means you are technically having dessert for breakfast and I’m here for it!

I used an 8.5×8.5 inch dish which made about 9 thick slices. Before this batch, I made the same recipe on a 10×10 and it was just as tasty only the bars were much thinner. Since I had to re-make the recipe, I had to share with my nephew Mateo. He has become my recipe tester. He tapped that little index finger on his hand (signing “more”) until my sister figured out he wanted nothing but another slice of the oatmeal bake!

The cinnamon sugar I sprinkled was using coconut sugar and cinnamon. Feel free to use pure cane sugar and cinnamon to get it a little closer to an actual churro. Enjoy! This is a yummy one!

Churro Oatmeal Bake

An easy bake that can be used as a quick breakfast bite or made into a dessert by adding some vanilla ice-cream. Kid approved!

Ingredients

  • 1 1/2 cup Almond Milk or Milk of Choice
  • 2 Eggs
  • 1/4 cup Melted Ghee, Butter or Coconut Oil If you are not intolerant to dairy, I suggest using a good grass-fed butter (I love Kerrygold).
  • 1/2 cup Coconut Sugar or Maple Syrup
  • 1 TBSP Cinnamon
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 cups Rolled or Quick Oats

For Topper

  • 1 tsp Cinnamon
  • 2 TBSP Coconut Sugar or Pure Cane Sugar

Instructions

  • Pre-heat oven to 350.
  • In a large bowl, mix milk, eggs, and melted ghee.
  • To the bowl, add sugar, baking powder, cinnamon and salt. Mix well.
  • Add the oats to the bowl until evenly mixed.
  • Grease an 8×8 baking dish.
  • Add mixture to baking dish and bake at 350 for 30 minutes.
  • In a small bowl, mix together sugar and cinnamon.
  • Once the bake is done, sprinkle cinnamon sugar mixture over the top.
  • Let it cool for 10 minutes before cutting.

Notes

Add a scoop of vanilla ice-cream to make this into a dessert! Sprinkle some more cinnamon-sugar on top.
