Easy Authentic Guacamole

Hey there strong people!

Are you ready to make a guacamole that won’t be extra? Since when is chipotle charging $2.20 for guacamole which is arguably the best topping? Anyways, hopefully you live in a region where there is an abundance of avocados. I don’t think I have met anyone who doesn’t love guacamole. I have made this guacamole recipe twice in the last week and my friends LOVED it. Or they were being nice…either way, I LOVE it.

My husband and I stopped at a produce stand just north of Monterey off Highway 1 and the avocados were beautiful! Don’t let the name give you false hope that these avocados come with some sort of bacon flavor. While that sounds amazing, it is simply the last name of the person who created the hybrid that led to this type of avocado. The pit is shaped differently than CA or Mexican Avocados, the flesh is creamy, and the skin is smooth with lighter “freckles”.

The “secret” ingredient that gives this guac recipe great flavor are pickled jalapeños AND the juice from the jar. The rest of the ingredients come from a traditional guacamole recipe. I used HATCH Nacho Sliced Jalapeños. This brand doesn’t have any added sugar or soybean oil like most brands.

We enjoyed it with veggies (Whole30) but this serves as a great dip for tortilla chips, burger topping, or for fajitas. ENJOY!

Easy Authentic Guacamole

Ingredients

  • 2 Large Avocados
  • 1/2 Lime juice
  • 2 TBSP Jalapeño Juice I used HATCH brand
  • 1/2 Cup chopped cilantro loosely packed
  • 1/4 Cup chopped onion
  • 1 TBSP Chopped pickled jalapeños I used HATCH brand
  • 1/2 tsp Sea salt more if needed

Instructions

  • Cut the avocados in half to take the pit out. Peel and put the flesh in a large bowl. Smash with a fork.
  • Add juice of lime and jalapeño juice to avocado. Mix well.
  • Chop the onion, cilantro, and pickled jalapeño peppers. Add to the avocado mixture.
  • Season with sea salt. Mix.
  • Taste and adjust to your liking.

Notes

DOUBLE the recipe for a larger batch. This serves about 4 people.
