“Elote” Style Chicken Salad

Recently, I came across a new Trader Joe’s product: “Everything but the Elote Seasoning”. My friend tagged me on the popular TJs Facebook page, and the comments were hilarious! Most people familiar with Mexcican-style street corn, were excited. Others were wondering what “Elote” is (LOL).

Well, let me explain to you the tasty combo. Sweet corn on the cob smothered in mayo sprinkled with cheese and chili powder. If you live in California, you have most likely come across the bright colored umbrella with the hard-working street vendor underneath it. We call them, “The Mangoneada Guy/Lady”. When you hear the familiar horn, you run outside. Or you go looking for them throughout their hangout streets. Anyway, THEY are the ones with the tasty Elotes amongst other Mexican treats!

This mayo-based chicken salad, is great over greens but get creative! You could make a sandwich, eat it plain, or with butter lettuce as wraps. If you want to make your own mayonnaise, check out my 5-Ingredient Mayo recipe. I made this salad even easier and used rotisserie chicken, but you can cook chicken breast as well.

The most basic way to use this product is by sprinkling it over corn-on-the-cob. It already has “cheese” and it’s up to you to add mayo or not. A little lime juice and you are set to go!

“Elote” Style Chicken Salad

A delicious chicken salad with Mexican street corn flavors.

Ingredients

  • 2 Pre-cooked Chicken Breasts Tip: I used a rotisserie chicken to save time.
  • 1/3 cup Mayonnaise I use a sugar free mayo made with a good quality oil: Primal Kitchen or Chosen Foods.
  • 1/2 Lime, juice Save the other half to garnish.
  • 1/2 cup Corn Kernels I used canned since corn is not in season. Fresh corn is best.
  • 1 cup Grape tomatoes
  • 1/4 cup Red Onion
  • 1 tsp Everything but the Elote Seasoning Blend Find this at Trader Joe's.
  • 1 Head of romaine lettuce or greens of choice.
  • Salt to taste. Note: the “Elote” seasoning is sweeter, adding salt will season the chicken well.
  • 1/4 cup Cilantro, garnish.

Instructions

  • In a large bowl, shred the 2 chicken breasts.
  • To the chicken, add the mayo, juice of 1/2 a lime, corn kernels, the "Elote" seasoning and salt to taste. Mix.
  • Add the red onion and tomatoes. If the chicken seems "dry", add more mayo.
  • Rinse, dry, and chop head of romaine lettuce. Add it to serving bowls.
  • Serve chicken mixture over lettuce. Garnish with cilantro and lime.
