Peach and Prosciutto “Caprese” Salad

Hey there strong people!

It has been a while since I posted a recipe but I am ready to get my blog going again! The recipe on this post is more of inspiration for you since it is so versatile and can be served for one or made for a crowd.

Now hurry and get the last of the peaches before summer is over!!!

Peach and Prosciutto Salad

Ingredients

  • 2-4 Peaches
  • 1 cup Fresh Mozzarella
  • 5-8 slices Prosciutto
  • 10-15 leaves Fresh Basil
  • 2-4 TBSP Pumpkin Seeds
  • 2-4 cups Arugula or Greens of Choice
  • 2-4 TBSP Olive Oil
  • 1-3 TBSP White Balsamic Vinegar
  • Salt + Pepper

Instructions

  • Slice peaches and discard pit.
  • Cut the mozzarella cheese into large slices.
  • Wash basil and take leaves off stems.
  • Break up the slices of prosciutto.
  • Now simply assemble the salad on top of bed of greens! Peach, cheese, basil, prosciutto…repeat!
  • Sprinkle pumpkin seeds.
  • Drizzle olive oil and vinegar. Salt and pepper and you are set!
