Pizza Frittata

Hey there strong people!

Hope you all are having a great week! One of the things I often hear from friends, family, clients, and so many other people how hard it is to eat a solid breakfast. A crustless quiche or frittata is the perfect breakfast if you are having a hard time cooking in the mornings because let’s face it, mornings can get crazy! A frittata is also perfect for a brunch when hosting a larger group.

I wanted to make a fun frittata that didn’t just have the traditional ingredients and I had pizza on my mind. Honestly, if you have eggs, veggies, and some sort of meat you can pull this recipe off. I am currently doing a whole30 otherwise a little goat cheese wouldn’t hurt! Feel free to add some!

Also, back to the whole30, most Italian sausages have added sugar which is why I used plain ground pork. Normally, I would have used 1 pound of Italian sausage since it has more flavors. Feel free to up the spices a bit more from what I added if you too are using plain ground pork.

Pizza Frittata

Ingredients

  • 1 lb. ground pork
  • 1/4 cup chopped onion
  • 1 garlic clove miced
  • 2 cup of sliced bell peppers red + green
  • 1 cup of sliced mushrooms
  • 6 eggs
  • 1/4 cup of coconut or almond milk
  • 2 TBSP black olives
  • 1/2-1 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1/4 tsp dried oregano
  • 1 TBSP chopped fresh basil + more for garnishing
  • 1 tsp of ghee or coconut oil for greasing baking pan

Instructions

  • Cook the ground pork in a skillet or pan until brown (about 5 minutes).
  • Move the cooked pork to a separate bowl to.
  • Pre-heat oven to 350 F.
  • Using the same skillet or pan, add onion and garlic and cook for 2 minutes.
  • Add the bell peppers and mushrooms to the pan and cook until tender (about 4 minutes).
  • In a separate bowl, whisk the 6 eggs.
  • Add the coconut or almond milk (if you’re afraid it will taste coconut-y, add water instead).
  • Add all of the spices to the egg mixture.
  • Throw all of the ingredients into egg mixture including olives.
  • Grease 9″ baking pan.
  • Add the mixture into greased pan and bake for 25 minutes or until firm and golden on the edges.
