5 Ingredient Almond Butter Cookies (Paleo)

Hey there strong people!

I hope your holiday season is going AMAZING. Here is what’s happening in our house, ALMOND BUTTER COOKIES. I used to LOVE peanut butter cookies and these are BETTER. Yep, better. They are so chewy and sweet and salty…yum!

I know the holiday season is almost over and you might be “sugared” out, but you will not regret making these cookies. I used “better” ingredients but at the end of the day, a cookie is a cookie.

This recipe only uses 5 ingredients and is kid friendly (I assume)…not actually tested with kids but the potential mess making was minimal. Almond butter, coconut sugar, an egg, vanilla extract, and baking soda…thats it! SO easy. I hope you guys enjoy this treat as much as I (and my husband) did!

5 Ingredient Paleo Almond Butter Cookies

Ingredients

  • 1 Cup of Almond Butter Creamy or chunky, I used Trader Joe’s brand.
  • 1 Cup of Coconut Sugar I used Wholesome Organic Coconut Palm Sugar.
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • Pinch of Sea Salt optional

Instructions

  • Preheat oven to 350.
  • In a medium mixing bowl, throw in all of the ingredients. Mix Well.
  • Line baking sheets with parchment paper. Using a cookie scooper or spoon, drop large spoonfuls on sheet. Make sure they are at least 2.5 inches apart as they will expand.
  • Bake for 12 minutes or until golden brown.
  • Let them sit for about 2 minutes before you transfer them to a cookie cooling rack then let them cool for at least 5 minutes.
  • Makes 1 dozen. Enjoy!

Notes

I used chunky almond butter which is why you can see almond pieces on the cookies.
