Hey there strong people!
Remember last week’s 5 ingredient mayo post? Well, here is the first recipe where that will come in handy! Cilantro-lime creamy chipotle dressing…fewww that’s a mouthful! You guys, this dressing is so tasty! It started when I decided to bring a large (so I thought) salad to a family party where tacos (yum) would be served. I figured I would make a Mexican-y (not a word) salad with a Mexican-y dressing. Well, turns out IT WAS A HIT. The “large” salad was gone before I knew it. I had a lot of people ask me about the dressing which made me happy since it is Paleo AND Whole30 compliant (sssshhhhh)!

Here’s how I enjoyed this tasty dressing: As a dip for my shishito peppers! I’m obsessed with these little guys. I just throw them in a non greased skillet until they blister up, add lime and sprinkle coarse sea salt. Yum!

-Slather on corn on the cob (De-lish!)

Cilantro-lime Creamy Chipotle Dressing
Ingredients
- 1 cup of “5 Ingredient Mayo” see previous post
- 1/4 cup of coconut milk I used “So Delicious Culinary Ready Coconut Milk”
- 2 tsp chipotle paste I used Olo’s Chipotle Paste
- 1/4 cup of chopped cilantro
- Juice of 1/2 lime
- 1/2 tsp sea salt
- Fresh pepper
Instructions
- In a mason jar, add 1 cup of mayo (if you make my homemade mayo that makes one cup, use the same jar).
- Add ALL ingredients, cover with lid, and SHAKE.
- Enjoy!
