Dairy-free “Agua de Horchata”

Posting a beverage for the first time on my website and what better than an “Agua Fresca”. Horchata is a delicious drink made by soaking rice in water, vanilla and cinnamon. Then you simply blend, strain, and add milk and sweetness. While there are many recipes, this is the most authentic method I know.

My goal was to make a dairy-free version, without compromising the great authentic flavors.

Well, this recipe comes pretty darn close to the “agua frescas” from your favorite Mexican restaurant.


This recipe takes some time since the rice has to be soaked for at least two hours. After that step, it is fast and easy! Oat milk is a great dairy alternative since it doesn’t give off a different taste like many other non-dairy milks. Likewise, using maple syrup instead of white sugar, is a great substitute that wont give off a different taste.

Dairy-free “Agua de Horchata”

Ingredients

  • 3/4 cup Rice
  • 4 cups Water
  • 1 Cinnamon Stick
  • 1 tsp Vanilla Extract
  • 2 cups Oat Milk
  • 1/2-3/4 cup Pure Maple Syrup
  • 4 cups Ice I blended the ice and added some to each drink when served.

Instructions

  • Bring 4 cups of water to a simmer. Right before it comes to a boil, turn the heat off and add rice, cinnamon stick, and vanilla. Let it soak for at least 2 hours.
  • After the rice has soaked and can break easily with your fingers, blend it in a high speed blender along with cinnamon stick.
  • Using a cheese cloth or fine strainer, strain rice mixture. Do not skip this step of your Horchata will be grainy.
  • Once strained, add rice mixture back to blender. Add oat milk, maple syrup, and ice to blender. You may need to make this in two batches.
  • Once it is blended, store in a large pitcher. Add more ice when it's ready to be served.
