Paleo Sloppy Joes

Hello there!
We are still on quarantine and this recipe has ingredients you might already have on hand! My first memory of having a sloppy joe is from elementary school lunches. I hated them! The mushy pasta sauce looking burger was not my thing! I was more of an ultra processed mini pizza kinda gal.

Somehow I now like sloppy joes but ever since I was introduced to “paleo” several years ago, I’ve been eating the ground sloppy joe meat over a sweet potato. It’s so tasty! If you need to make some modifications, this recipe is very giving. Heck, if you have hamburger buns go for it! Be well, be safe, and ENJOY!

Paleo Sloppy Joes

Ingredients

Baked Sweet Potatoes

  • 4 Small Sweet Potatoes
  • Sprinkle of Salt and Pepper

Sloppy Joe

  • 1 tbsp Olive Oil
  • 1 lb Ground Turkey or Beef
  • 1/2 cup Chopped Onion
  • 2 Garlic Cloves Minced
  • 1/2 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Chili Powder
  • 2 tbsp Coconut Sugar
  • 1 tbsp Apple Cider Vinegar
  • 8 oz Tomato Sauce About half a 15oz can.
  • 1/2 cup Ketchup I use Primal Kitchen brand.
  • 1 tsp Mustard
  • 1 tbsp Coconut Aminos
  • Garnish: Pickled or Fresh Jalapenos Optional

Instructions

Baked Sweet Potatoes

  • Preheat oven to 400 degrees F.
  • Wash and dry sweet potatoes and then wrap in foil.
  • Place wrapped sweet potatoes in 400 degree oven directly on the rack and bake for 30-40 minutes or util the sweet potato is soft. Check with oven mitt.

Sloppy Joe

  • In a medium pot or skillet, heat olive oil.
  • To the pot or skillet, add onion, garlic, and ground meat. Cook until meat is fully cooked, about 10 minutes.
  • Add the remainder of the ingredients in the order listed.
  • Once it comes to a boil, let it simmer on low for 20 minutes. Adjust any spices to taste.
  • Serve sloppy joe meat on top of baked sweet potato. Garnish with jalapenos.
