Maple-Bacon-Fig Jam

Hey there strong people!

This recipe was created because our friends brought over a bag full of deliciously ripe figs. IT’S FIG SEASON! I love figs. Bacon covered figs, LOVE. Goat cheese stuffed figs, LOVE. Fig pizza with prosciutto, LOVE. Alright, you get the point. These little guys are simply amazing.

I have made bacon wrapped figs so I thought, you know what sounds good? Bacon-fig jam! The sweet and savory flavors just go so well together. Spread over gluten-free toast, fried plantains, pancakes, or anything you come up with!

  • 1/2 cup maple syrup
  • 1/4 cup honey opt.
  • 1 TBSP balsamic vinegar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 tsp lemon juice 1/4 lemon wedge
  • dash of sea salt
  • splash of orange juice 1-2 TBSP
  • 6 pieces of thick bacon

Instructions

  • In a sauce pan or dutch oven, throw in all of the ingredients and set aside (no heat yet).
  • While the fruit is marinating, cook the bacon.
  • Set the bacon aside to cool.
  • Over medium high heat, bring the fig-maple syrup mixture to a boil.
  • Chop the bacon into small pieces and add them to the mixture.
  • Lower the heat and simmer for 30-45 minutes or until the sauce becomes thick aka jam-y.
  • Let it cool and transfer the jam into mason jars.
  • Refrigerate once it is cooled.

Notes

Omit the honey for a slightly less sweet jam. Serve on top of whatever you come up with! Gluten free bread, plantains, pork chops, etc!
