Hey there strong people!
I have to give credit to my dear friend Ashley M Lam who I met during our time in Pullman, WA for this recipe. When she gave me this recipe, it called for soy sauce but I knew Coconut Aminos would be an easy replacement. I think I made it about 4 times in a month! This is basically the filling of a traditional egg-roll. Honestly, I like this better than an egg-roll! Enjoy! Comment with any questions.
Naked “Egg-Roll”
Servings: 4
Ingredients
- 1 lb. Ground Pork
- 1-2 Tablespoons minced Garlic
- 1-2 Tablespoons minced fresh Ginger
- 1 “Cole-slaw” Packet
- 1/4 Cup of Coconut Aminos I use Big Tree Farms Organic Coconut Aminos
- Dash of Salt
- Green onion and Sesame Seeds for garnish.
- 1 Tablespoon of Ghee
- 1 Packet of Cauliflower Rice I use the Trader Joe’s brand
- Salt and Pepper
Instructions
- In a deep medium pan, over medium heat, brown the ground pork.
- As the ground pork is cooking, in a separate pan, melt the Tablespoon of ghee and add the entire packet of cauliflower rice.
- Once the pork is fully cooked and browned, drain the excess fat (or leave if you wish).
- Add the minced garlic and ginger to the beef. Cook for 2 additional minutes.
- Throw the entire packet of “cole-slaw” mix with the beef.
- Add the coconut aminos and cook until the cabbage shrinks.
- Cook the cauliflower rice until it is tender and add salt and pepper.
- Serve the naked “egg-roll” mixture over the rice. Garnish with green onion and sesame seeds.
Notes
The cauliflower rice is a mini recipe within the recipe. The last 3 ingredients on the above list, are for the “rice”.
