If you are looking for an easy side dish (or snack) full of flavor, this recipe is for you! Carrots are a veggie that is almost always in our fridge. If you want something different or ran out of other veggies, carrots are always there for you (lol). This is also a great dish for kids since the carrots are very soft and sweet. The bright colors are so fun!
Using an oven is easy, but if you have an air-fryer, you can roast them in there at 400 F for 20 minutes.

Roasted Colorful Carrots
Servings: 4
Ingredients
- 1 lb. Colorful Carrots Any carrots work.
- 1 tbsp Ghee Butter is works too.
- 1 tbsp Olive Oil
- 1 tbsp Maple Syrup Sub honey or agave.
- 2 Garlic Cloves, minced.
- 1/4 tsp Salt More to taste.
- Pepper
- 1/4 cup Frech Mint, chopped. Optional
Instructions
- Preheat oven to 425 degrees F.
- Peel and rinse 1lb. of carrots, about 6 large carrots.
- Cut the carrots into "fries" or any other shape.
- Place the carrots on a large cookie sheet. If it is not non-stick, add parchment paper.
- In a small bowl, melt ghee or butter. To the bowl add olive oil, maple syrup, and minced garlic. Mix well.
- Drizzle the mixture over the carrots coating evenly. Add salt and pepper.
- Roast carrots in a 425 preheated oven for 25 minutes, tossing half way.
- Optional, add chopped mint to serve.
