Hey there strong people!
This recipe was created because our friends brought over a bag full of deliciously ripe figs. IT’S FIG SEASON! I love figs. Bacon covered figs, LOVE. Goat cheese stuffed figs, LOVE. Fig pizza with prosciutto, LOVE. Alright, you get the point. These little guys are simply amazing.
I have made bacon wrapped figs so I thought, you know what sounds good? Bacon-fig jam! The sweet and savory flavors just go so well together. Spread over gluten-free toast, fried plantains, pancakes, or anything you come up with!
Maple-Bacon-Fig Jam
Ingredients
- 1 lb. figs 2 1/2 cups chopped
- 1/2 cup maple syrup
- 1/4 cup honey opt.
- 1 TBSP balsamic vinegar
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 tsp lemon juice 1/4 lemon wedge
- dash of sea salt
- splash of orange juice 1-2 TBSP
- 6 pieces of thick bacon
Instructions
- In a sauce pan or dutch oven, throw in all of the ingredients and set aside (no heat yet).
- While the fruit is marinating, cook the bacon.
- Set the bacon aside to cool.
- Over medium high heat, bring the fig-maple syrup mixture to a boil.
- Chop the bacon into small pieces and add them to the mixture.
- Lower the heat and simmer for 30-45 minutes or until the sauce becomes thick aka jam-y.
- Let it cool and transfer the jam into mason jars.
- Refrigerate once it is cooled.
Notes
Omit the honey for a slightly less sweet jam. Serve on top of whatever you come up with! Gluten free bread, plantains, pork chops, etc!
