Hey there! Welcome back! (I might be saying that to myself!)
My last post seems like it was ages ago. Since then, a lot has changed. The biggest change: I am a mom! We welcomed our sweet baby Bear 2 months ago! Maximus Bear Thom has been our greatest blessing and I couldn’t be happier! Since his birth, my husband has cooked me breakfast everyday! I love coming downstairs to my breakfast on the table, thank you Scott.
Peanut butter and jelly oatmeal is something I cook every once in a while. In the past, I have used real peanut butter, but it never gets evenly distributed throughout the oatmeal. I am all about the perfect bite. I need the nutty flavor with every spoonful! Thats where the idea to use peanut powder came about. There are many brands of peanut powder or peanut butter powder, but I love the Trader Joe’s brand. It’s organic, has no added sugars, and it’s inexpensive.
This is a simple but flavorful breakfast option. If you want to add some protein, mix in a scoop of collagen! My favorite brand is Vital Proteins.

Peanut Butter & Jelly Oatmeal (Single Serving)
Ingredients
- 1/2 cup Oats
- 1 + 1/4 cup Water or Milk of choice
- 1.5 tsp Coconut Sugar Or sweeter of choice
- 1 tbsp Peanut Powder I used the Trader Joe’s brand
- 1 tbsp Fruit Preserves I used St. Dalfour French Brand–strawberry (no added sugars)
- 1 Scoop Collagen Peptides Optional
- Fresh Fruit Garnish
Instructions
- Mix oats with water/milk. Cook the oats according to the instructions on the package. I microwaved for 1.5-2.5 minutes.
- After the oats are done, add sugar and peanut powder. Mix well.
- Top with fruit preserves and fresh fruit.
- Optional: mix in collagen peptides for extra protein! I love Vital Ptoteins.
