Instant Pot Baby Back Ribs

Hope this post finds you well during this time! Before you knock this recipe, hear me out. This method for cooking ribs is non-traditional but it is very easy, fast, and delicious!

I use baby back ribs here (about 2 pounds). The first step after mixing all the spices needed for the dry rub is pat drying the ribs with paper towels.

Once the ribs are dry, rub the dry rub mixture all over the ribs front and back. Use up all of the dry rub mixture.

Put the broth, apple cider vinegar, onion, garlic, and liquid smoke in the pot. Using the wire rack, place the ribs top facing out on the rack. For 2 pounds or less, 20-23 minutes will be enough on high-pressure. Let it naturally release pressure for about 10 minutes.

The final step after the ribs are out of the insta pot is lathering in a good BBQ sauce. Once you do that, broil the ribs for about 5 minutes. This will make them crispy and taste as if they were made in a BBQ or smoker.

Ingredients

  • 2 lbs. Baby Back Ribs
  • Dry Rub *see recipe bellow
  • 2 Cups Chicken Broth water is ok
  • 1/4 Cup Apple Cider Vinegar
  • 1 Onion chopped
  • 4 Garlic Cloves
  • 1 tsp Liquid Smoke optional

Dry Rub

  • 2 tsp Coconut Sugar brown sugar ok
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1.5 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Ground Black Pepper

Instructions

  • In a small bowl, mix together all of the dry rub ingredients. Set aside.
  • Pat dry the ribs with paper towels. Using your hands, rub the ribs with the dry rub mixture.
  • Through in the broth, apple cider vinegar, onion, garlic, and liquid smoke into the insta pot.
  • Place the wire rack in the insta pot and place the ribs in there top facing out.
  • Cook the ribs on high pressure for 20-23 minutes. Once done, let it naturally release pressure for 10 minutes.
  • Carefully take the ribs out and place them on a baking sheet. Lather them with your favorite BBQ sauce.
  • Once ready to serve, place the ribs under the broiler in oven for about 5 minutes or until desired crispiness.
